Crustless Mini Smoked Salmon Bites

Note: you can make these 1 day ahead and enjoy the next day or store in the freezer.

These salmon bites are perfect for any occasion and they couldn't be easier! Call them mini quiches or fancy frittatas, either way these won't last long in your house. Traditionally, you'd think these would be considered a transitional type meal that crosses between breakfast and lunch (hello, brunch). But, with the rich smoky flavors of smoked salmon in these bites, you could even serve it as a dinner entrée with a side salad. Low carb, high protein and addictively tasty... we're in! 

Ingredients 

  • 6 eggs
  • 1/2 cup milk or cream
  • 1/4 cup cheddar cheese - grated (save some for topping)
  • 1/2 cup Gruyère cheese - grated
  • 1/3 cup rice flour (or all purpose)
  • 1/2 cup onion - minced
  • 1/4 cup spinach
  • 1/4 cup chopped WISC/Seabolts Smoked Salmon
  • 1/4 cup diced tomatoes
  • Salt and pepper to taste
  • Chopped chives
  • 1/4 tsp oregano or thyme

Instructions 

  1. Grease/spray muffin pan
  2. Preheat oven to 350°F
  3. Mix eggs with cream & milk beat well
  4. Add grated cheddar, grated Gruyère & flour. Stir to combine
  5. Add spices & filings
  6. Spoon into muffin tins. 3/4 full 
  7. Top with a sprinkle of cheese and chives
  8. Bake 20-30 minutes. Until toothpick comes out dry or slightly golden brown 
  9. Let cool before removing
Options: 
Add chilies 
Substitute any smoked fish or cooked salmon
