A simple, fresh, and flavorful seafood dish with flexible sides
This is one of those meals that looks impressive but comes together with ease — perfect for weeknights or casual dinner parties.
The flaky cod is seasoned simply, topped with garlicky burst cherry tomatoes, and baked to perfection. It’s packed with flavor, light, and endlessly adaptable.
Serve it over pearl couscous with a bright cucumber salad for a balanced plate — or mix it up with your favorite grain or veggie side.
🐟 Ingredients
For the cod & tomato topping:

2–4 pacific cod fillets (skinless, boneless)

Salt, pepper, and a pinch of cayenne

1 pint cherry tomatoes

4 cloves garlic, minced (or however much your heart desires)

1–2 tbsp olive oil

Fresh or dried basil (to taste)
🔪 Instructions
1. Prep the fish:
Pat cod dry and season both sides with salt, pepper, and a touch of cayenne.
2. Sauté the tomatoes:
Heat olive oil in a skillet over medium heat. Add tomatoes and garlic with a pinch of salt and pepper. Cook for 6–8 minutes until tomatoes begin to burst and soften. Add basil and stir. Remove from heat.
3. Bake the fish:
Place cod in a baking dish and spoon the tomato mixture over the top. Bake at 375°F for 10–12 minutes, or until fish flakes easily.
4. Serve it up:
We plate the cod over couscous, topped with tomatoes, and enjoyed! We also added a cucumber salad on the side if you like a fresh crunch.
